Perfect for Valentine's and Pancake Day - this super easy sweet treat can be eaten on either day, or both 😋

Chocolate Covered Strawberries & Raspberries

Chocolate covered strawberries and raspberries are nice and easy to make... fun and a little messy, and might just keep your kids entertained for 30 minutes this half term.

Chop up and add to pancakes with lemon and creme fraiche, or enjoy as a romantic dessert.

I've used 70% dark chocolate which is the healthier variety containing vitamins and anti-oxidants, and less refined sugars/additives.

If you're not a dark chocolate fan, either milk or white chocolate can be used. However, they have a different melting point so be aware of that.

My toppings are from the cake decorating section in the supermarket.

It's good to experiment with toppings so use what you like.

Ingredients
  • Bar of 70% dark chocolate
  • Honeycomb sprinkles
  • Freeze dried raspberry sprinkles
  • Macadamia nuts
  • Dark choc0late shavings
  • White chocolate shavings
  • Chopped glacier cherries
  • Cocktail sticks for raspberries
Method

Cover a tray with greaseproof paper.

To melt the chocolate:

Place the chocolate in a glass bowl, over a pan of water on the hob and heat through gently to melt (make sure the water isn't touching the bottom of the bowl).

Or

Break the chocolate up into a microwavable bowl, cook for two to three minutes on high power - check and stir throughout to make sure the chocolate doesn't overheat.

Use a spoon to cover your strawberries or raspberries in chocolate, over the chocolate bowl to catch the mess.

Take another spoon to cover the fruit in the topping of your choice, again over the topping bowl to minimise mess.

Place on your tray and repeat.

Once the tray is full, refrigerate for an hour to help the chocolate reset.

Easy, tasty and relatively healthy.
